These easy-to-make, chocolate goji granola bar's are a rich source of iron, plant-based protein, good fats, and antioxidants making them an easy way to curb hunger cravings throughout the day or satisfy your sweet tooth without the refined sugar. 


The best part? They can be stored in the fridge for up to two weeks, making them the perfect on-the-go solution and an ideal choice to keep your energy up throughout the day.

Goji Energy Bar With Dark Chocolate

Ingredients

1/2 cup coconut oil

1/4 cup nut butter (of your choice)

2 tablespoons rice malt syrup

1/4 teaspoon sea salt

2 cups rolled oats

1/2 cup shredded coconut

3/4 cup walnuts, roughly chopped.

1/2 cup almonds roughly chopped 

1/2 cup pepita seeds

1/4 cup goji berries

1/2 cup dried apricots

3-4 coarsely chopped dried dates

80g Dark Chocolate

Method

Preheat your oven to 180°C and line a tray with baking paper.
 

In a food processor or blender, blend goji berries, dried apricots, dates, and half of your coarsely chopped nuts and seeds. If the mixture seems dry, add a splash of water.


In a large mixing bowl, combine oats, shredded coconut, the remaining nuts, and seeds. Add nut butter, rice malt syrup, and salt, then mix until everything is evenly coated.


Spread the mixture evenly onto the prepared baking sheet and choose one of two options to complete the bars.

Option 1: Chocolate Coated Bars


Bake for 5 to 10 minutes until the edges turn golden brown. 
 

While still warm, transfer the mixture back into the mixing bowl and incorporate the coconut oil. 

 

Shape portions of the mixture into log shapes, arranging them neatly on the baking tray. 

 

Place the tray in the freezer to chill. In the meantime, prepare the chocolate coating by breaking the dark chocolate into small pieces and melting it in a heatproof bowl along with a tablespoon of peanut butter over simmering water. 

 

Once chilled, generously coat each log with the melted chocolate mixture, place them back on the lined tray, and sprinkle with vibrant goji berries.

 

Option 2 - Chocolate Drizzle: Bake the slice for 15 minutes until it turns golden brown. Remove from the oven and place it on a cooling rack. Once completely cool, cut it into bar slices, around 3 - 4 cm in length. Drizzle the melted dark chocolate lightly across all the bars and top them with goji berries.

Store your bars in an airtight container in the fridge for up to 2 weeks.
